Background: A poor appetite is a frequently occurring problem among elderly, which increases the risk of undernutrition. Elderly women with a poor appetite could increase their energy intake when the main cooked meal meets their preferences. However, limited research on this topic has been performed so far. Objectives: This study addresses two objectives. The first objective was to develop nutritional guidelines for the main cooked meal for elderly women with a poor appetite. The second objective was to adapt two main cooked meals to the preferences of elderly women, in line with the developed guidelines, as well as two control meals. Methods and design: We performed a literature study, which was expanded with a field study to complement and to confirm the information. Subsequently, a number of nutritional guidelines were calculated and compared with the existing Dutch nutritional guidelines. Results: We formulated a number of food guidelines and identified a number of food preferences of elderly with a poor appetite, namely: variation (among others in high protein products), variation in color, and a preference for solid high carbohydrate products. Based on this information two adapted main cooked meals and two control main cooked meals were composed. Conclusion: This study described the possibilities to adapt main cooked meals to the food preferences of elderly women with a poor appetite, which meets the reformulated guidelines.
