Samenvatting

Nowadays inulin and oligofructose, also known as fructans, are of great importance towards the food industry. These fructans are classified as dietary fibres, which comes along with a lot of health benefits. These dietary fibres are applied to food products, where they can replace fat and sugars. In the Cosun Food Technology Centre a product which only contains oligofructose is analysed with AOAC 997.08. This product can also be analysed by AOAC 2009.01. This new developed method is favourable, because this method is more internationally accepted and only this method is needed to obtain the total dietary fibre content. Also this method won’t give an overestimation of the total dietary fibre content as previous AOAC methods do. The product which only contains oligofructose is analysed by these two methods. The AOAC 997.08 measures the fructan content, which means the oligofructose and/or inulin content. The AOAC 2009.01 measures the total dietary fibre content, but since the product only contains oligofructose, the total dietary fibre content should be equal to the oligofructose content. Therefore the two methods should obtain the same oligofructose content in the product that is analysed. Earlier measurements at the Cosun Food Technology Centre showed that with AOAC 2009.01 3% less oligofructose content is obtained than with AOAC 997.08. The research is therefore focused on whether there is a step during AOAC 2009.01 that is causing degradation or loss of oligofructose content or not. Measurements show no clear step which could be responsible for this problem and show a difference of only 0.7% and 0.3%. This difference is a lot smaller than the 3% that is expected and can therefore also be due to the variance of both methods. A validation of both methods led to the temporarily conclusion that there is no significant difference between the results of AOAC 997.08 and AOAC 2009.01. The validation will be completed from which the significance of the difference is calculated again to make a final conclusion.
