Samenvatting

The objective of this research is to understand under what conditions plant-based cheese may be considered as a substitute for cheese within the food manufacturing industry. Based on the literature, the food manufacturing industry has a major influence on climate change in the world. One of the most consumed food products is cheese. The use and integration of plant-based cheese with the food manufacturing industry are small, even though clear benefits can be stated such as a healthier option, a smaller ecological footprint and cost reduction. This study investigates the potential for plant-based cheese producers to introduce their innovation to the food manufacturing industry, by describing the external factors, the willingness and flexibility of the food manufacturing industry to integrate the innovation and the need in R&D to develop food products.
